According to the Shimano spec sheet, 12-sp. XTR rings are aluminium. Pretty boring really. XT are a mix of aluminium, carbon and steel. 11-sp. XTR used various combinations of aluminium, carbon fibre, stainless steel and titanium, which differed between 1x, 2x & 3x rings.

Really!? Doesn't sound like 12sp XTR is good value if only aluminium. For a weight penalty of ~45g the durability of XT steel teeth must surely win out. Not to mention that XT is half the price.

Depends on the particular alloy used, which isn't specified in the spec sheet. Some aluminium alloys are pretty hard-wearing.

For those that rotate two or more chains on their drivetrain, how often do you swap them - assuming it would be quite regularly?
Road bike swaps around 250-280, mountain bike around 180-200.
Very dry and dusty here so I am cautious of fine dust penetration in the roller/pin areas.
