My other half uses a Spesh Power (old version, not the mimic) on the roadie. went through about 5 different saddles before we landed on that. tried womens specific and not. seems to be vary by person as to what suits. MTB seems less of an issue as up and out of the saddle so frequently.
Most likely the range on the Ant+ sensor is the issue. USB extension cord is the way to go; get the dongle right next to the sensor.
I had similar issues. a lot of signal drops outs mid ride. was sorted as soon as i got the dongle closer to the sensor

I did Port to Port in 2015. a mostly successful 4 days of racing barring a small crash on stage 4.
