Got most of what you need but I'll have to hold onto it for insurance until they clear it (they might want to inspect or ask me to get a second quote). Depends how urgently you want the stuff.

Will have to wait a few weeks:
Used 105 5700 shifters both working, few scuffs.
Used 12-30 cassette with 5700 GS (the one that is 28t capacity but can run 30t), 5700 fd.
42cm drop bars compact.
34/50 BB30 cranks
Munted frame :p
Spyre IS mount brakes + 140/160 trp rotors, about 500km in.

Ready to ship now:
New cassettes: 10-sp: 12-30 tiagra, 11-32 slx, 11-34 slx
New sora R3000 derailleur. Apparently this will work with 10 speed shifters with the 'old' ratios - 10 speed 105 and above and tiagra 4600, but NOT tiagra 4700 and grx.

I have a set of alloy Specialized Hover bars (40cm at the hoods/ 44cm in the drops)
11sp 105 hydro shifters, f&r derailleur (will take up to 36T), 11spd cassette

If you're running 2x then I reckon an 11-32 cassette is fine.

If you're running 1x then I'd aim for at least an 11-36 unless you're in a flat-ish area.

Feelin' a bit rrranty
FYI you can use a WolfTooth Roadlink (think they're $30-40) to get up to 40t on a 1x10 setup. You'll struggle to find a 10sp road derailleur that will take bigger than 30t rear due to jockey wheel placement and the 10sp mtb derailleurs don't play with the road shifters.
