This is so impressive if you're a nerd like me:
I have no knowledge of or experience in this type of industry, but I wonder how something like this could be profitable. Huuuge capital outlay for setup and I don't reckon that team would be on minimum wage.

Yeah, I figured that was their market, but it can't be a very big one that buys more than one bike very couple of years.

Maybe the strategy is to develop high-end branding and then start doing lower-level models leveraging that brand image.

Sometimes the best business strategy is to not be invested in a "vision" - create a product and just enough demand to market the entire business and sell it on to the next person that has a "dream" - I have seen many business created and just sold as soon as viable. Repeat business and longevity of brand was not the goal just the ability to move the business on.
