Best easy XC riding to try is along the yarra - Ivanhoe/Yarra Flats/Banyule/Westerfolds. This is all really windy single track, not really any hills, there a few little technical bit to have fun on which are also easily bypassed. From there I would move on to some of the easier trails at you...

Lack of a helmet is not a valid excuse :P We have heaps of full face helmets which we loan out for clubbies so that people can have a go...also track is on public land, therefore always open to come practise :) Hope we see you sometime - the more there are the better the event.
