For those guessing: it's contested, but from contemporaneous accounts droit du signeur is thought to be either:

1. The right of the local lord to tax marriages
2. The right of the local lord to have sex with the bride of any of his vassals on their first night of marriage, unless a tax ("avail") was paid instead.

This happened an awful lot for a practice which is only really known euphemistically by a foreign name.
