11sp is 500g and $90-100. Not that much heavier than XT, and also that much cheaper.

XT level has always been the sweet spot of the 3 for me.
Some say it’s not cheap.
Some say it’s not light.
Most find it strong enough.

+1, XT for the win every time. @T-Rex commented on how nice my gears shifted when we switched yesterday. His SRAM (I guess maybe a level below XT?) with dinner plate was a noticeable difference. Been a major factor in choosing my last two bikes, perhaps to my detriment on the first one but the XT was great.
